Haiku knife is the most traditional japanese knife. The Honoki wood is the most used in Japan for handles, but it was treated in Haiku's version to be 100% hygienic. The blade made from Molybden/Vanadium (+0.8% carbon) steel is always handmade sharpened on #1000 stone, and is attached by traditional bamboo key in the handle. Very light and balanced, the knife is also very sharpened (V edge)
